Mushrooms are enigmatic fungi and the avid mushroom collector has to connect to them on an almost spiritual plane. Mushrooms do not grow ‘just like that’, but form a symbiotic community with other growing plants. It is easiest to find larch and pine mushrooms and they are the easiest for beginners to recognise. When mushrooms are plentiful the stems can be thrown away leaving only the best bits. Fry the fresh mushrooms in butter or use for sauces or soups.
